There’s something about eating bright, colorful food. My new favorite thing to do with beets is make Beet Hummus! I guess it’s technically not hummus because there aren’t any beans, but there is tahini! And you can eat it however you would hummus.

Adding a splash of magenta to your plate is unique, fun, and beets are loaded with benefits - they’re heart-healthy, anti-inflammatory, and cleansing. Even more fulfilling is being able to grow the beets myself, remembering when I started them from seed as I pull them out of the ground, rinse off the dirt, and whip them into this creamy, beautiful dip.

Beet Hummus

Ingredients:

3-4 medium beets, boiled until fork tender, then skins removed

1/4 cup tahini

Juice from 1 lemon (I’ve also used a few drops of doTerra lemon essential oil in a pinch)

1-2 cloves garlic

1-2 tsp cumin

A few Tbs extra virgin olive oil

Sea salt & cracked black pepper to taste

Optional toppings: powdered turmeric, smoked paprika, toasted nuts, chopped parsley or chopped cilantro

Instructions:

  1. Cut the ends of the beets and boil until fork tender - just enough that a fork passes into the middle of the beet easily. Drain and let cool a bit, and the skins will slide right off.

  2. Put beets in food processor with tahini, lemon juice, garlic, and cumin. Pulse until it all starts coming together into a paste.

  3. Start drizzling in olive oil and keep pulsing or processing until it’s a creamy consistency.

  4. Add a little salt & pepper, pulse it again, and do a taste test until you’re happy with the level of seasoning. Add optional toppings.

Here are some ways I love to enjoy beet hummus:

  • dip for raw veggies (carrots, cucumbers, celery) or roasted veggies

  • dip for crackers or chips - Simple Mills almond meal crackers are particularly good with it!

  • spread it on toast and add other toppings like goat cheese or nuts

  • dip grilled chicken in it

  • use as a sauce on top of a rice bowl

…and lastly….make BEETZA!

For beetza, you basically make a pizza like you normally would (store-bought or homemade crust), but just use beet hummus instead of tomato sauce. This is especially delicious with goat cheese and fresh parmesan cheese, arugula or spinach, and my chef husband’s secret weapon: a drizzle of raw honey at the end.
