Green-Themed Charcuterie Board (With Pea Pesto Recipe)

A charcuterie board is one of the best shared food experiences that anchors us together and encourages the slow unraveling of time.

It has a feeling of a special feast - for both kids and adults - without anyone having to cook a thing. You don’t even need plates!

This green-themed board is fun to put together to celebrate St. Patrick’s Day or just anytime you need a healthy snack board. I love how many healthy options you can include on a charcuterie board, but it’s also so filling and satisfying. I basically filled it with all the green foods I could find (in March!) and added some splashes of color in between:

💚Kale chips
💚Okra chips
💚Dried edamame
💚Pistachios
💚Green salsa
💚Irish cheddar cheese
💚Goat cheese rolled in herbs
💚Salami
💚Pepperoni
💚Hummus with parsley and dill garnish
💚Green grapes
💚Green olives
💚Cucumbers
💚Pickles
💚Green apples
💚Asparagus (slightly browned in a pan with olive oil/salt/pepper and sliced in half)
💚Guacamole (on another tray because this one was full!)

This spring, I’ll be adding pea pesto! Here’s how to make it:

Creamy Pea Pesto

Ingredients:

  • 1 bag frozen peas, thawed

  • 2-3 cloves garlic

  • Juice from 1-2 lemons

  • Sea salt & black pepper, to taste

  • Fresh mint or basil (optional)

  • 1-2 drops doTerra lemon essential oil (optional)

  • Generous drizzle of extra virgin olive oil

Directions:

  • Add thawed peas, garlic cloves and lemon juice (and fresh herbs if using) to a food processor and process until fully blended.

  • Once the chunks are blended, keep the processor going and drizzle in olive oil to your desired consistency. This can take from 1/4 to 1/3 cup depending on your preference. I like mine creamy but with some texture.

  • Add sea salt & pepper and process it into the mixture. Taste, and adjust as needed.

  • Scoop pesto out into a bowl (not plastic) and add 1-2 drops doTerra lemon essential oil for a brighter flavor, if you’d like!

  • Dip anything in it!

HOT TIPS:

  • One of the most common mistakes that makes the board not feel as artistic as it could be is putting all of one item in one spot.

  • See how the different items are arranged in multiple piles? You can also stack and fold them in different ways to create interest.

  • Start with your cheese and make small groupings in different spots on the board. Then take your next item like meat and make small groupings next to the cheese. Keep doing this until every spot is taken up.
